With only 3 ingredients, I present this spongy sponge cake that will serve as a base for the cake three 3 milks and tarts to fill. It is the classic Genovese cake that is used as a base for cakes. With eggs, flour and sugar, you do not need more to prepare it. The funny thing is that the same weight of eggs is used as sugar and flour and so we have 240 g of eggs (4 eggs L size), 120 g of flour and 120 g of sugar. Curious at the same time that easy to remember.
It seems incredible that with so little there is a cake so rich. Since it does not contain yeast or baking powder, it is very important that you introduce a lot of air into the mixture with very enveloping movements. You will see that the cake is growing in the oven and even comes out of the mold. It's a real past, it seems magic. It will become a classic in your house.

1.- Preheat the oven with heat up and down to 160 degrees centigrade.
2.- Separate the whites and the yolks in two different bowls. 19659005] 3.- Add one half of the sugar to the bowl of the whites. Assemble the whites with the electric or manual rod mixer. Stop beating when you see that the whites are already drawing stroke and that will indicate that they have reached the snow point.
4.- Add the rest of the sugar to the bowl of the yolks. Beat the mixture without cleaning the blender. The yolks will whiten and you can stop beating when, as with the whites, you see that the line is drawn.
5.- Incorporate the flour little by little through from a sieve or sieve. Now, with enveloping movements, go integrating the mix. So that it does not lower the volume alternates spoonfuls of clear and sieved flour. Be careful not to lower the mixture since it does not contain any yeast or baking powder. Add more flour and when you see that you have trouble working the mixture, add more whites. Continue mixing with enveloping movements until you finish incorporating both clear and flour.
6.- Place a sheet of vegetable paper in the base of the mold and cut the excess. Spray a little of the mold release spray all over the inside and pour the whole cake dough. Smooth the surface to level the dough.
7.- Bring the sponge cake to the preheated oven at 160º C. Place the mold on the tray at the second level of the oven. Watch and compare with the video how it grows in the oven. There comes a point at which the cake stops growing and begins to fall, it's time to remove it from the oven. You can click before with a skewer stick and check that it comes out clean. In my case, I baked it for 35 minutes.
8.- Unmold the cake before it cools. Leave it on a rack to cool.
My advice for preparing sponge cake
This is a small cake I have prepared with a mold of 18 cm in diameter and 7 cm tall. If you want a larger cake, fold ingredients and bake in a mold of 24 cm.
As this cake does not have aromas, you can add a teaspoon of vanilla essence and zest of lemon or orange peel, choose the aromas that you prefer for your cake. The Genovese cake is used as a base for cakes, you can even make an aplan and use it as a base for a gypsy arm.
